This is my take on the popular Jamaican Rice & Peas. Ingredients: 1 cup red beans (washed) 2 cups long grain parboiled rice (washed) 1 large onion (diced) 5 cloves garlic (minced) 2" piece ginger (minced) 2 cups pumpkin (cubed) 1 bundle celery (chopped) 1 bundle chives (chopped) 4 sprigs thyme 1 scotch bonnet/scorpion pepper 3 bay leaves 1 tsp all spice berries (crushed) 2" piece cassia/wood spice 10 cups water 2 cups coconut milk salt & black pepper (to taste) Directions: 1.
